Kimchi is also thought to
be one of the healthiest foods in the world. Koreans eat so much of this
super-spicy seasoning in their daily life. The natives say “Kimchi” instead of
“cheese” when they take pictures. kimchi is a reddish fermented cabbage and some
radish.
For Koreans, kimchi is used to serve in every meal. They can eat kimchi either alone or
mixed with rice and noodles. Kimchi can be used in everything, example soups, pancakes, snacks, as a topping on pizza and burgers and so on.
Kimchi is loaded with
vitamins A, B and C, but its biggest benefit is it to have “health bacteria”
called lactobacilli, this “health bacteria” can be found in fermented foods
like kimchi and yogurt. These good bacteria helps with digestion and it seems
to help to stop and even prevent yeast infection according to the recent study.
Kimchi Jjigae also calls as kimchi soup. It is a most popular dish in Korea and nowadays most of the people love it too because of K-waves. I love kimchi soup so much and I do often cook it myself. Recently I found out a very useful tool, the “Electronic Lunch Box”. It was easy to function and save time and energy too.
So today I’m going to do
an experiment by using the ‘electronic lunch box’ to cook kimchi soup. If you
like Kimchi, you have to try this recipe. Check it out!
This is the electric lunch box I use~
Like some other Korean food, there are different types of kimchi soup depending on the ingredients you use. Maybe some of the people will think that is difficult to cook kimchi soup, but actually is very easy what you need is just Kimchi, pork and tofu.
Nowadays, you no need make kimchi your own, you can get it easily from the grocery store that vacuum pack original imported from Korea.
What You Need
- 1 cup of kimchi cut it into pieces
- 2 cups of water
- ½ pack of tofu
- 1 tablespoon of Hot Pepper Paste
- ½ tablespoon of Soy Bean Paste
- 1 teaspoon of sugar/vinegar
- ½ teaspoon of anchovy stock
- ½ cup of pork (you may use beef, chicken and even tuna)
- Some glass noodles
Firstly,
what you need to do is cut the kimchi into bite pieces. I prefer to use
poggi kimchi that I brought from the grocery store because I think that it more
tasty and crunchy.
Chop
the pork into bite-sized pieces, you can try any cut of pork that you like
depending on how much fat you want. Slice ½ pack of tofu into cube size. If you
want a very spicy soup, you can add in some hot pepper.
tofu in little cube size~
Next,
mix well the kimchi, pork, hot pepper paste, soy bean paste, sugar, anchovy
stock and put all the ingredient into the bowl provided
by the lunch box except tofu. Just like the photo show below.
Then add in a cup of water into the electric lunch box, put the bowl on it and press on the start to cook for around 45 minutes. 30 minutes later put in the tofu in to the bowl and cook for another 15 minutes.
And
Ta-daaa! My self-made Kimchi soup is ready to serve!! Nom~ Nom~
It
taste really good for me, you can add more hot pepper paste or hot pepper
flakes and chilies into the soup base if you want taste more spicy.
If you don't like pork or you can't eat it, you can try to replace it to others like chicken, beef or tuna. Hope that this personal recipe suit your taste bud. Try this someday and enjoy~
